Ingredients

  • 1 frozen banana or 1 cup frozen pineapple
  • 1 scoop vanilla protein powder
  • 3/4 cup almond milk or milk of choice
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 1-2 teaspoons maple syrup or honey, optional
  • 4-5 ice cubes, if needed for extra thickness 

Optional Toppings

  • Lemon zest
  • Dollop of Greek yogurt or coconut cream
  • Crushed almonds or cashews
  • Shredded coconut
  • Granola

Instructions

  • Add the frozen banana or pineapple to a high-speed blender.
    Add the protein powder, Greek yogurt, almond milk, lemon juice, lemon zest and vanilla.
    Blend until completely smooth and creamy.
    Taste and add a little maple syrup or honey if you prefer a sweeter shake.
    Add ice and blend again if you want a thicker, colder consistency.
    Pour into a glass and add your favourite toppings.
    Serve immediately and enjoy your lemon pie in a glass! 🍋🥧
    Recipe Tips
    For extra creaminess: Use frozen banana rather than pineapple and choose thick Greek yogurt.
    For a fresher flavour: Use frozen pineapple. It gives the shake a lighter, tropical twist.
    For more lemon flavour: Add another ½ teaspoon of finely grated zest rather than simply adding lots more lemon juice.
