Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup coconut butter (softened)
  • 1/2 cup vanilla or unflavoured protein powder
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Add-Ins or Toppings

  • Dark chocolate chips
  • Melted chocolate drizzle
  • Chopped peanuts
  • Flaky sea salt

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    In a mixing bowl, combine peanut butter and softened coconut butter until smooth.
    Note: Soften coconut butter by placing the jar in hot water or give it a burst in the microwave.
    Add protein powder, maple syrup or honey, vanilla extract, and sea salt.
    Mix until a thick, smooth fudge mixture forms.
    Fold in any optional add-ins if using.
    Press the mixture evenly into the prepared pan.
    Add toppings if desired.
    Refrigerate for 1–2 hours, or until firm.
    Slice into 12 or more squares and enjoy.
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
