Ingredients

  • 1 cup dates
  • 3/4 cup rolled oats
  • 1/2 cup shelled pistachios
  • 1/4 cup dried cranberries
  • 1/4 cup almond butter or cashew butter
  • 1 scoop vanilla or unflavoured protein powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1-2 tablespoons any milk (if needed)

Optional Coating

  • Finely chopped pistachios
  • Shredded coconut
  • Extra dried cranberries

Instructions

  • If your dates are dry, soak for 10 minutes in warm water and drain.
    Add oats to a food processor and pulse until roughly broken down.
    Add dates, almond butter, protein powder, vanilla, and salt. 
    If the mixture feels too dry, add a tablespoon of milk to help it combine.
    Lastly add cranberries and pistachios and pulse a few times to combine but still keep chunks for little pops of colour and flavour.
    Scoop out into 10-12 portions (more or less) and roll into balls using your hands.
    Roll in optional coatings if desired.
    Place on a tray and refrigerate for 30 minutes to firm up.
    Store in an airtight container in the fridge for up to1 week or freeze for up to 3 months.
