Ingredients
1cupdates
3/4cuprolled oats
1/2cupshelled pistachios
1/4cupdried cranberries
1/4cupalmond butter or cashew butter
1scoopvanilla or unflavoured protein powder
1teaspoonvanilla extract
Pinch of sea salt
1-2tablespoonsany milk (if needed)
Optional Coating
Finely chopped pistachios
Shredded coconut
Extra dried cranberries
Instructions
If your dates are dry, soak for 10 minutes in warm water and drain.Add oats to a food processor and pulse until roughly broken down.Add dates, almond butter, protein powder, vanilla, and salt. If the mixture feels too dry, add a tablespoon of milk to help it combine.Lastly add cranberries and pistachios and pulse a few times to combine but still keep chunks for little pops of colour and flavour.Scoop out into 10-12 portions (more or less) and roll into balls using your hands.Roll in optional coatings if desired.Place on a tray and refrigerate for 30 minutes to firm up.Store in an airtight container in the fridge for up to1 week or freeze for up to 3 months.
