If you love the combination of peanut butter, gooey caramel and chocolate, these Chocolate Caramel Protein Bars are about to become a favourite!
Imagine a chewy, wholesome oat and coconut base, topped with a thick layer of naturally sweet date caramel made creamy with peanut butter, then finished with a rich chocolate topping. Every bite delivers that delicious sweet-and-salty combination that makes classic caramel bars so irresistible.
The best part? These bars are no-bake, easy to make and packed with simple ingredients you can recognise.
Here at Blended Bites, I believe healthy eating should be about adding goodness, not taking away all the foods you love. These bars are a perfect example of Addition Eating – bringing together ingredients that offer protein, fibre and satisfying fats while still tasting like a proper dessert.
Why Make Your Own Protein Bars?
Have you ever picked up a protein bar at the supermarket, looked at the ingredients list and wondered what half the ingredients actually are?
Commercial bars can be convenient, but some contain long ingredient lists, added sugars, sweeteners, flavourings and other ingredients you may not particularly want in your everyday snacks. Making your own gives you something valuable: control over what goes into your food. You choose the peanut butter, the protein powder, the chocolate and the sweetener. You can look for quality ingredients that suit your preferences, adjust the sweetness and leave out unnecessary extras.
There are no mysterious ingredients hiding in this recipe – just everyday foods combined to make something delicious.
Homemade bars can also be more economical, especially when you make a batch at once. Buying oats, peanut butter, dates and chocolate in larger quantities often costs less per serving than purchasing individual packaged bars. The exact savings depend on your ingredients and local prices, but making your own is certainly worth considering if protein bars are a regular part of your routine.
And because these bars freeze beautifully, you can make a batch, portion them out and have a homemade snack ready whenever you need one.
A Chewy Oat And Coconut Base
The foundation of these bars is a delicious combination of rolled oats, shredded coconut, peanut butter, maple syrup and protein powder.
Oats provide carbohydrates and fibre, helping give the base its chewy texture. Coconut adds a lovely flavour and a little extra texture, while peanut butter brings rich, nutty goodness.
Protein powder helps increase the protein content, making these bars a handy option when you want a more protein-rich snack.
Maple syrup binds the ingredients together and adds sweetness without needing to bake the mixture.
Together, these ingredients create a firm, satisfying base that balances beautifully with the soft caramel layer above it.
Naturally Sweet Date And Peanut Butter Caramel
Traditional caramel is often made with sugar, butter and cream. For this recipe, we are taking a different approach. Soft Medjool dates blend with peanut butter to create a thick, sticky caramel-style filling that’s rich, smooth and naturally sweet. Dates provide sweetness along with fibre and other naturally occurring nutrients.
Peanut butter adds creaminess and a wonderfully nutty flavour. The result is not identical to traditional caramel, but it has that lovely gooey texture and rich sweetness that make caramel bars so appealing. If your dates are a little dry, soak them in warm water for 10 minutes, then drain them well before blending. This helps create a smoother filling.
Finished With A Chocolate Topping
No peanut butter caramel bar would be complete without chocolate! A layer of melted dark chocolate adds a rich finish and contrasts beautifully with the sweet date caramel. Choose a chocolate you enjoy, whether that is a dark variety for a more intense flavour or a slightly sweeter option. You can even sprinkle a little flaky sea salt over the chocolate before it sets. That sweet-and-salty contrast takes these bars to another level.
A Treat That Fits Your Everyday Life
These bars make a delicious afternoon snack, a lunchbox addition or a little something to enjoy with your morning coffee.
The combination of oats, peanut butter, dates and protein powder provides a mix of carbohydrates, fats and protein. That combination can make them more satisfying than a sweet treat made primarily from refined sugar, although the nutritional values will depend on your ingredients and serving size.
Remember, homemade does not automatically mean low-calorie or sugar-free. Dates and maple syrup still contribute natural sugars, and peanut butter and chocolate are energy-dense. The advantage is that you can choose the ingredients and portions that work for you.
The Blended Bites Philosophy
At Blended Bites, I love showing how simple ingredients can be transformed into treats that feel indulgent while offering something nourishing, too. These Chocolate Caramel Protein Bars do not ask you to give up chocolate, caramel or sweetness. Instead, they bring those flavours together with oats, dates, coconut and protein powder.
That is the beauty of Addition Eating: focus on what you can add, rather than everything you think you need to remove. Make a batch, keep a few in the fridge and freeze the rest. You will have a delicious homemade treat ready whenever the craving for peanut butter, caramel and chocolate strikes!

Ingredients
Oat Coconut Base
- 1 cup oat flour (oats blended to a flour)
- 1/2 cup desiccated coconut
- 1/2 cup peanut butter
- 1/2 cup vanilla or unflavoured protein powder
- 1/4 cup maple syrup
- 1-3 tablespoons milk, as needed
Date Caramel Layer
- 1 1/2 cups soft Medjool dates, pitted
- 1/2 cup peanut butter
- 1-3 tablespoons warm water, as needed
- Pinch of sea salt (optional)
Chocolate Topping
- 1 cup dark chocolate chips or chopped dark chocolate
- 1 tablespoon coconut oil (optional, for a smoother topping)
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or can make in a silicon bar mold.
Oat Coconut Base
- Mix the oats, coconut and protein powder in a bowl. Add the peanut butter and maple syrup. Stir until combined, adding milk gradually until the mixture holds together when pressed.Transfer the mixture to the prepared pan and press it into an even, compact layer.
Date Caramel Layer
- Blend the dates and peanut butter until thick and smooth. Add warm water a little at a time until the mixture reaches a spreadable caramel-like consistency. If your dates are firm, soak them in warm water first and drain well.Spread the date mixture evenly over the base.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour the melted chocolate over the caramel and spread into an even layer. Add a pinch of flaky salt if desired.Refrigerate for at least 2 hours, or until the layers are firm. Lift from the pan and slice into 12 bars using a sharp knife.Storage: Keep in an airtight container in the refrigerator for up to 1 week, or freeze for up to3 months. Thaw briefly before serving.Blended Bites Tip: Protein powders absorb liquid differently. Add milk to the base gradually, and if the mixture seems dry or crumbly, add another small spoonful until it presses together easily.
