Whether you are celebrating a birthday, meal prepping healthy treats for the week or simply want a colorful dessert that makes you smile, this recipe is guaranteed to become a favorite.

Why You Will Love This Cake

Traditional birthday cake is delicious, but it often comes with lots of refined flour, sugar and butter. This version delivers the same vanilla cake flavor in a much more nourishing way.

It’s:

Completely no-bake
High in protein
Soft and creamy
Easy to prepare
Perfect for meal prep
Naturally sweetened
Ready after chilling

Even better, it stores beautifully in the fridge, making it ideal for grab-and-go snacks or healthy desserts throughout the week.

The Secret to Birthday Cake Flavor

The magic comes from a combination of vanilla, almond extract and colorful sprinkles. Vanilla provides that classic cake flavor, while just a tiny splash of almond extract creates the unmistakable “bakery-style” birthday cake taste.

The rainbow sprinkles don’t just add color – they add fun. Sometimes healthy eating doesn’t need to be serious. Sometimes it simply needs sprinkles.

A Creamy, Protein-Packed Base

Instead of flour and butter, this cake starts with oat flour and almond flour, creating a soft, cookie-like texture that’s rich without being heavy. Greek yogurt, cream cheese and vanilla protein powder bring everything together into a creamy dough that firms beautifully once chilled.

The result is somewhere between cheesecake, cake batter and vanilla fudge. It’s rich enough for dessert but balanced enough to enjoy as an afternoon snack.

Why Protein Makes It Better

Adding protein doesn’t just boost nutrition – it also improves the texture. Protein powder helps bind the mixture while making every slice more satisfying. Combined with Greek yogurt and cream cheese, it creates a dessert that keeps you feeling fuller for longer compared to traditional cake.

It’s one of the reasons this recipe works so well for breakfast, post-workout snacks or those afternoon moments when you want something sweet but nourishing.

The Frosting

Every great birthday cake deserves a generous layer of frosting.

This healthier frosting combines cream cheese, Greek yogurt and vanilla protein powder into a silky, creamy topping that’s smooth enough to spread but light enough to keep every bite refreshing.

A final shower of rainbow sprinkles turns this simple dessert into something celebration-worthy.

This cake is wonderful for:

Birthdays
Baby showers
Afternoon tea
Lunchbox treats
Healthy desserts
Weekend meal prep
Summer celebrations when you don’t want to use the oven

Because it’s served chilled, it’s especially refreshing during warmer months.

  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional, but recommended)
  • 3 tablespoons natural rainbow sprinkles
  • Pinch of sea salt

Protein Frosting

  • 1/2 cup cream cheese, softened by leaving at room temperature for an hour or so or give a couple bursts in the microwave.
  • 1/2 cup Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons rainbow sprinkles

Instructions

  • Line an 8-inch square pan or loaf tin with baking paper.
In a medium bowl, combine the oat flour, almond flour, protein powder and sea salt.
Add the cream cheese, Greek yogurt, maple syrup, coconut butter, vanilla and almond extract.
Mix until a thick, soft dough forms. If it's too sticky, add a little more oat flour; if too dry, add another spoonful of yogurt.

Press the mixture evenly into the prepared pan.
Refrigerate for at least 2 hours or freeze for 45 minutes until firm.

Protein Frosting

  • Beat together the frosting ingredients until smooth and creamy.
Spread the frosting evenly over the chilled cake.
    Decorate generously with rainbow sprinkles.
Chill for another 30 minutes before slicing into squares.
Store covered in the refrigerator for up to 5 days or freeze individual slices for up to 2 months.
    Blended Bites Tips 💡
Use room-temperature cream cheese for the smoothest filling.
For an even firmer cheesecake-like texture, freeze for 20 minutes before serving.
Swap almond flour for finely ground cashews if desired for an even creamier texture.
If the mixture feels too soft, stir in a little extra oat flour or protein powder.
Chill thoroughly before slicing to achieve clean squares.
For the best flavor, let the cake sit in the refrigerator for a few hours before serving.
Use natural rainbow sprinkles if you would like to keep the recipe free from artificial colors.
