Leave one portion as the creamy mint layer. Then simply blend cocoa powder into the second portion. That is your chocolate layer done! This keeps the recipe wonderfully simple while giving you that gorgeous two-tone appearance.

How To Make Mint Chocolate Protein Fudge

Start by adding your ripe avocado, melted coconut oil, cashew butter, protein powder and mint extract to a food processor or high-speed blender. Blend until completely smooth and creamy. Taste the mixture. Depending on your protein powder and personal preference, you can add a little natural sweetener such as maple syrup or honey.

Next, divide the mixture roughly in half. Spread one half into a small lined loaf pan or square container. Add cocoa powder to the remaining half and blend again until beautifully chocolatey. Spread the chocolate mixture over the first layer. Smooth the surface, add any toppings you like, and refrigerate or freeze until firm. Then simply slice into squares.

Ingredients

Mint Layer

  • 1 large ripe avocado
  • 1/3 cup cashew butter
  • 1/4 cup coconut oil, melted
  • 1/2 cup vanilla or unflavoured protein powder
  • 1/4-1/2 teaspoon peppermint or mint extract
  • 1-2 tablespoons maple syrup or honey, optional
  • Pinch of sea salt

Chocolate Layer

  • Half of the mint fudge mixture
  • 2 tablespoons cocoa powder

Optional Toppings

  • Cacao nibs
  • Finely chopped dark chocolate
  • Shredded coconut
  • Flaked sea salt

Instructions

  • Line a small loaf pan or square container with parchment paper.
    Add the avocado, cashew butter, melted coconut oil, protein powder, mint extract and sea salt to a food processor or high-speed blender.
    Blend until completely smooth and creamy, scraping down the sides as needed.
    Taste and add maple syrup or honey if you prefer a sweeter fudge.
    Divide the mixture evenly into two portions.
    Spread one portion evenly into the prepared pan. Smooth the surface with a spatula.
    Return the second portion to the food processor. Add the cocoa powder and blend until completely combined and chocolatey.
    Carefully spread the chocolate mixture over the mint layer, smoothing the top.
    Sprinkle with cacao nibs, chopped chocolate or a little sea salt if desired.
    Refrigerate for 1–2 hours, or freeze until firm.
    Remove from the pan, slice into squares and enjoy.
    Store in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze for up to 1 month. Allow frozen pieces to sit for several minutes before eating.
