Fudgy, chocolatey, nutty little bites with a delicious pool of melted chocolate in the middle
There is something wonderfully nostalgic about thumbprint cookies. That little indentation in the centre, traditionally filled with jam, makes every cookie look special. But for a Blended Bites twist, we are swapping the jam for rich melted chocolate and creating the cookie itself from dates, nuts, seeds and protein powder.
The result is a soft, chewy, naturally sweet Date & Nut Thumbprint Protein Cookie that tastes much more indulgent than its wholesome ingredients suggest.
These are not your traditional crisp, buttery cookies. They are dense, fudgy and wonderfully chewy, almost like a chocolate energy bite in cookie form. Rolling them in chopped toasted nuts adds a delicious crunch around the outside, while the little pool of melted chocolate in the centre gives you a rich chocolate hit in every bite.
And the best part? No baking required.
A Cookie Made From Real Food
The foundation of these cookies is Medjool dates. Dates are one of my favourite ingredients for creating healthier treats because they provide natural sweetness while also giving no-bake recipes that sticky, chewy texture we love.
Nuts and seeds add healthy fats, texture and plenty of flavour. You can use your favourite combination, making these cookies wonderfully flexible. Almonds, cashews, walnuts, pecans, pumpkin seeds and sunflower seeds all work beautifully. Then we add cocoa powder for deep chocolate flavour and protein powder to give these little cookies some extra staying power.
This is where the Addition Eating philosophy comes in. Instead of focusing on what you need to remove from your diet, you are adding ingredients that nourish your body while still creating something delicious.

Don’t Skip The Toasted Nut Coating
The toasted nuts around the outside are more than just decoration. They add a wonderful contrast to the soft centre of the cookie. Toasting the nuts first brings out their natural oils and gives them a deeper, richer flavour. Once chopped and rolled around the cookies, they provide a lovely little crunch with every bite.
You can use one type of nut or create a mixture. Pistachios would be beautiful for a pop of colour, almonds give a classic crunch, while pecans or walnuts create a richer flavour.
And Then There Is The Chocolate Thumbprint
Once your cookies are shaped, simply press your thumb or the back of a small measuring spoon into the centre of each one. This creates the little well that gives thumbprint cookies their name.
Then comes the best part: melted chocolate. Spoon just enough chocolate into each indentation to create a small glossy pool. As it cools, the chocolate will firm up while remaining deliciously rich and satisfying. For an extra finishing touch, sprinkle a tiny amount of flaky sea salt over the chocolate.
Chocolate and salt are a match made in heaven.

Ingredients
Chocolate Protein Cookies
- 1 cup Medjool dates, pitted
- 3/4 cup mixed nuts
- 1/4 cup mixed seeds, such as sesame, pumpkin and sunflower seeds
- 2 tablespoons cocoa powder
- 1 scoop chocolate or vanilla protein powder
- 1 tablespoon natural nut butter
- 1 teaspoon vanilla extract
- Pinch of salt
- 1-2 tablespoon water or milk, only if needed
Nut Coating
- 1/2 cup nuts, lightly toasted and chopped
Chocolate Thumbprint
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
- Pinch of flaky sea salt, optional
Instructions
- Toast the coating nuts. Place the chopped nuts in a dry frying pan over medium-low heat and toast for a few minutes, stirring frequently, until lightly golden and fragrant. Set aside to cool.Note: If your dates are hard soak in hot water for 10 minutes and drain.Add the dates and mixed nuts to a food processor. Pulse until finely chopped and the mixture begins to stick together.Add the seeds, cocoa powder, protein powder, nut butter, vanilla and salt.Process until everything is combined and the mixture forms a sticky, fudgy dough. If it seems too dry, add water or milk, one teaspoon at a time.Scoop out approximately 1 tablespoon of mixture and roll between your palms to form a ball.Gently flatten each ball into a thick cookie shape.Roll the edges and surface of each cookie in the toasted chopped nuts, gently pressing them in so they stick.Place the cookies on a lined tray.Using your thumb or the back of a small measuring spoon, gently press an indentation into the centre of each cookie.
Chocolate Thumbprint
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon a small amount of melted chocolate into the centre of each indentation.Sprinkle with a tiny pinch of flaky sea salt if desired.Refrigerate for 30–60 minutes, until the chocolate has set.Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months. Allow frozen cookies to sit at room temperature fora few minutes before enjoying.
