Ingredients

  • 2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla protein powder
  • 1/4 cup natural peanut butter
  • 1 tablespoon maple syrup or honey (optional)
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Mix-Ins

  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons mini dark chocolate chips
  • 2 tablespoons descicattted coconut
  • 4 dates, chopped
  • 1 tablespoon hemp hearts

Optional Toppings

  • Chopped peanuts
  • Flaky sea salt
  • Cacao nibs
  • Freeze-dried strawberry crumbs

Instructions

  • Line a tray or plate with baking paper.
    In a bowl, mix together the yogurt, peanut butter, protein powder, maple syrup, and vanilla until smooth and creamy.
    Fold in any optional mix-ins.
    Spoon (10-12) small clusters onto the prepared tray.
    Freeze for 2–3 hours until completely firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, using two forks, dip each frozen cluster into the melted chocolate dip until it is fully coated. Lift the cluster from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining clusters.
    Or simply drizzle the chocolate generously over the top.
    Sprinkle with your chosen toppings before the chocolate sets.
    Return to the freezer for 10–15 minutes until the chocolate has hardened.
    Store in an airtight container in the freezer for up to 1 month. Allow the clusters to sit at room temperature for 2–3 minutes before eating for the creamiest texture.
