Chocolate Yogurt Protein Clusters (Viral Recipe!)
Ingredients
- 1 1/2 cups thick Greek-style yogurt, plain or vanilla
- 1/2 cup soft dates, chopped (if hard, soak 30 minutes and drain)
- 1/2 cup cashew (or any other nut or seed) butter
- 1/4 cup vanilla or unflavoured protein powder
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Toppings Or Mix-Ins Optional
- 1/2 cup roasted, salted, peanuts, chopped
- Fresh, dried or freeze-dried fruit, chopped
- Chocolate chips or shavings
- Shredded coconut
Instructions
- In a bowl, mix together all of the cluster ingredients. Taste and adjust as you would like (you can add a little vanilla extract if needed). Stir in any mix-in's. You could add nuts or seeds like hemp seeds for crunch!Use a cookie scoop to scoop 8-10 mounds of the mixture onto a lined baking sheet. Place in the freezer for 2-3 hours until completely solid.Next melt the chocolate coating.
Chocolate Coating
- Place chocolate chips and coconut oil in a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the clusters and after checking they are firm and set, working quickly, using two forks, dip one at a time into the bowl of melted chocolate until it is fully coated. Lift the cluster from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining clusters.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. If desired, sprinkle mini chocolate chips or chopped nuts on top of the chocolate while it is still wet, pressing them in gently.Chill until chocolate has set.Store in the freezer for up to 3 months. If frozen, let them sit at room temperature for a few minutes before serving.How to store yogurt bites:If you want the inside to be extra creamy, after the bites have been in the freezer for an hour or two, store them in an air-tight container in the fridge. They will be good for a few days.
