Frozen Banana Protein Cups
Ingredients
- 1 cup cottage cheese
- 1 large ripe banana
- 1/4 cup natural peanut butter
- 1 scoop vanilla protein powder
- `1 teaspoon vanilla extract
Chocolate Swirl
- 1/2 cup dark chocolate chips
- 1 scoop chocolate protein powder
- 1 teaspoon coconut oil
Optional Toppings
- Chopped peanuts
- Extra melted chocolate
- Sea salt flakes
Instructions
- Line a 12-cavity muffin tin with paper liners, or use a silicon muffin pan.Add cottage cheese, banana, peanut butter, vanilla protein powder and vanilla extract to a blender or food processor.Blend until completely smooth and creamy.Spoon the mixture evenly into muffin cups.Melt chocolate chips with coconut oil until smooth, then stir in chocolate protein powder.Drizzle the chocolate mixture over each cup and use a toothpick or knife to swirl it through.Add optional toppings if desired.Freeze for 3–4 hours, or until firm.Let sit at room temperature for 2–3 minutes before eating for best texture.Store in an airtight container in the freezer for up to 2 weeks.
