Ingredients
Chocolate Protein Base
- 1 cup almond flour
- 1/2 cup chocolate or vanilla protein powder
- 2 tablespoons cocoa or cacao powder
- 3 tablespoons almond butter or peanut butter
- 2 tablespoons maple syrup or honey
- 2-4 tablespoons milk of choice
- 1/2 teaspoon vanilla extract
Coconut Filling
- 1 1/2 cups desiccated coconut
- 3 tablespoons coconut cream or melted coconut oil
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon vanilla extract
Frosting
- 3/4 cup thick Greek-style Yogurt
- 1 scoop chocolate protein powder
- 1 tablespoon cocoa powder
Instructions
- In a bowl, combine almond flour, protein powder and cocoa powder.Add almond butter, maple syrup, vanilla, and milk. Mix until a soft, pliable dough forms.If needed, add a little more milk to help it come together.Coconut FillingIn a separate bowl, mix shredded coconut, coconut cream (or oil), maple syrup, and vanilla until combined into a slightly sticky mixture.Place the chocolate dough between two sheets of parchment paper and roll into a rectangle (about ½ cm thick).Spread the coconut mixture evenly over the chocolate base.Using the parchment paper to help, carefully roll the dough into a tight log.Place the log in the fridge for 30–45 minutes or freezer for 15–20 minutes until firm.
Frosting
- In a bowl, combine Greek yogurt, protein powder and cocoa powder and mix until smooth. Continue to mix; Frosting will come together. Add milk if needed to thin.Spread on top and sides of cake.Slice into 10 slices.Best enjoyed slightly chilled for clean slices and perfect textureStore in the fridge for up to 1 week or freezer for up to 3 months.
