Ingredients

  • 1/2 cup coconut butter, softened (store bought or homemade recipe below in notes)
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 cup walnuts, roughly chopped
  • 2 tablespoons desiccated coconut (optional)

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    If your coconut butter is solid, soften by placing the jar in some hot water for a few minutes or give it a burst or two in the microwave.
    In a mixing bowl, combine softened coconut butter and melted coconut oil until smooth.
    Add the protein powder, maple syrup, vanilla extract and sea salt.
    Stir until a thick, creamy mixture forms.
    Fold in the chopped walnuts and shredded coconut, if using.
    Transfer the mixture to the prepared pan and smooth the top with a spatula.
    Refrigerate for 2-3 hours or freeze for 45 minutes until firm.
    Remove from the pan and cut into 12 (more or less) squares.
    Store chilled until ready to serve.
     Refrigerator: Up to 1 week or freezer for up to 3 months.
    Allow frozen pieces to sit for 5 minutes before enjoying.
    Variations
    Add 2 tablespoons cocoa powder for a chocolate walnut version.
    Stir in cinnamon for a cozy flavor twist.
    Top with extra chopped walnuts and coconut before chilling for added crunch.
