Almond Bites With Healthy Chocolate Frosting

Almond butter oatmeal cookies topped with buttery chocolate frosting. Yum! These flourless healthy cookies are full of that nostalgic, delicious nut butter flavor you know and love, but are gluten free and dairy free!
Just when you thought there was no way to improve on a classic cookie here is the recipe. These nut butter oat bites are the stuff of dreams.
Chewy and sweet, they don't require any cooking or baking as there is no raw eggs or flour in them.  This is the new way of “unbaking”, healthier, quicker and easier. A super healthy snack or dessert that can be made ahead of time and they store well.
Sometimes you just want a simple dessert and when those cravings strike, reach for this fabulous cookies recipe. These treats are a bit like fudge inconsistency, perfectly sweet, richly nut buttery and balanced with warm hints of vanilla.
Great to take to a pot luck or family gathering - they make a huge hit with everyone and they also make a perfect homemade gift! Almond butter makes up the base of these cookies, but peanut butter, cashew butter or seed butter all work in this recipe.
They come together very quickly and satisfy the cookie, fudge and quick snack craving! You will make this recipe again and again when you need the perfect snack or dessert that’s on the healthier side. Or make in a large batch and keep them in the freezer so there’s always a healthier treat on hand!

Ingredients

Base Cookie

  • 3/4 cup almonds
  • 1/2 cup desiccated coconut
  • 1/2 cup oats, instant or quick
  • 1/3 cup almond (or any nut) butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Frosting

  • 1 cup coconut butter - store bought or homemade recipe below in notes
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons any milk to thin to desired consistency

Instructions

Base Cookie

  • Line a 12 cup muffin pan with liners or use a silicon muffin pan.
    Place almonds into a food processor and process until broken down and crumbly. Add coconut, oats, almond butter, honey, coconut oil and vanilla and continue to process until smooth and dough like.
    Portion the dough into each of the 12 muffin cups and press down until even and smooth with the back of a spoon.

Chocolate Frosting

  • Blend all ingredients in food processor until smooth, adding the milk one tablespoon at a time until a slightly runny texture is achieved.
    Let the food processor run long enough to gently warm and smooth the frosting (one to two minutes in a cooler room temperature when the coconut butter will be quite hard; less in warmer room temperatures).
    Spoon the chocolate topping over the dough mixture in each cup distributing evenly.
    Freeze muffin tin in a flat area for 30 minutes or until firm. Serve and enjoy immediately or keep in the freezer until ready to serve.
