Let me present you with my newest creation. Delicious energy bites with a slightly salty, creamy, peanut butter heart made with wholesome ingredients. These are not to be missed.

These energy balls are packed with healthy fats and fibre, they are super easy to make. And, to make it even better, they only require 5 simple ingredients to make. Perfect for road trips, parties or as a pre-workout snack. Let’s do this!

These creamy bite-sized treats are perfectly portioned and great for sharing. They make for easy grab-and-go snacks, an excellent treat to gift to friends, or serve as desserts.

Energy bites are one of my FAVORITE things to meal prep for a healthy snack. They are cheaper than buying store bars and better for you because you can control the ingredients. They are quick to make with only a short ingredient list, but they look and taste so decadent. Oh my! What a dreamy treat.

Peanut Butter Filled Energy Bites

WOW! these beautiful, delicious healthy, bliss balls will wow everyone. So super simple to make, one step in the blender and you are done! Soft and fudgy, sweet and creamy, tangy and sweet, the perfect low carb snack that you can make under 10 minutes.

Ingredients

Inside Filling

  • 2 tablespoons smooth peanut butter

Outer Layer

  • 1/2 cup oats, instant or quick
  • 2 tablespoon desiccated coconut
  • 1 tablespoon cocoa powder
  • 1 tablespoon smooth peanut butter
  • 1 teaspoon coconut oil

Instructions

  • Scoop out 6 little portions of the peanut butter (roughly around half a teaspoon each) onto a piece of baking parchment and place in the freezer. Leave to harden for an hour or so. Once the peanut butter is set and easier to manoeuvre, gently roll into small balls and return to the freezer for at least 4 hours.
    Place the oats, cocoa powder and coconut into a food processor and process for a few seconds.
    Place the peanut butter and coconut oil into a small microwave-safe dish and heat at 50% power in 10 second bursts stirring between each one until melted.
    Stir the melted peanut butter and coconut oil into oat, coconut, cocoa mixture until combined. It will seem very dry at first but will be fine once incorporated.
    Divide the mixture into 6 portions. Roll each portion into a ball and flatten with your hand. Place the frozen peanut butter ball in the centre of the flattened disc, then fold the outer layer around the peanut butter centre to ensure it is completely covered.
    Roll into a ball and return to the fridge for at least 30 minutes to set.
    Store in fridge for up to 1 week or freezer for up to 3 months.
