This recipe should be at the top of your dessert list. This foolproof confection recipe boasts a luscious filling of cream cheese and honey, perfectly balanced with blueberries and your favourite protein or collagen powder.

Blueberry Cheesecake Protein Balls

WOW! these beautiful, delicious healthy, bliss balls will wow everyone. So super simple to make, one step in the blender and you are done! Soft and fudgy, sweet and creamy, tangy and sweet, the perfect low carb snacks that you can make under 10minutes.

Ingredients

  • 1 cup almond (or oat) flour
  • 1 cup coconut flour
  • 1 cup fresh or frozen blueberries
  • 1/2 cup cream cheese, softened
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen powder
  • 1 teaspoon vanilla extract
  • 1/2 cup desiccated coconut for rolling

Instructions

  • Place all ingredients (except coconut for rolling) in a food processor and process until mixture is well combined into a sticky dough. If mixture too dry, add a little water a tablespoon at a time until it comes together.
    Using your hands,scoop out small portions of the mixture and roll into 12 or more balls, about 1-1½inches in size. Roll in the desiccated coconut and place on a baking sheet lined with parchment paper.
    Place in the fridge or freezer until set and once chilled, enjoy as a tasty snack or energy boost!
