This is another of those viral TikTok recipes that has done the rounds of the internet. And for good reason. They are really really good and I cannot stop eating them. They literally taste like Snickers bars!
Stuffed dates make for the best healthy snack or treat! They are so very easy to make and will satisfy all your chocolate candy cravings. I am a big fan of anything related to dates. I always have them on hand. A great, healthy, absolutely natural alternative to junk processed snacks.
What Do Dates Taste Like?
Move over raisins, you got nothin’ on these juicy dates! Dried dates have a wrinkled outside, but sweet, caramel-like and sticky inside.
What Kind of Dates Should I Use?
Medjool dates! I know there are so many kinds of date varieties but my favorite ones are Medjool dates and I strongly suggest you use them!
There’s a lot of meat to the fruit of Medjool dates resulting in a super caramel-y sink-your-teeth into texture that just makes you keep going back for more.
The downside is they can be a bit pricey but I swear, they are worth it!
Ingredients for Chocolate Covered Dates
Dates. Hello hello my lovely dates. This is why you are here! Grab your favorite Medjool dates and meet me back here!
Peanut Butter. I use natural peanut butter for this recipe because the dates add so much sweetness to each bite all you really need is a nut butter made of just nuts!
Chocolate. Semi-sweet chocolate or milk chocolate is my favorite kind to use for this recipe but feel free to use dark chocolate or even white chocolate would be fun!
Coconut Oil. I’m using this because it will help thin out the chocolate a bit so you get a nice chocolate coating that isn’t too thick.
Peanuts. They add a lot of fun to these chocolate covered dates. If you are looking for other options, you could sub in puffed quinoa, sprinkles, or just a sprinkle of flaky salt!
These stuffed dates are a healthier alternative to your favorite candy bar, made with all-natural ingredients. I love making a big batch of these stuffed dates and keeping them in the freezer for any time I have a chocolate craving (which is basically always). It really is like you are having your favorite candy bar, but made healthier!
When you are craving something sweet but don’t want to heat up the oven or spend a lot of time making a dessert, these bites are the perfect solution – the perfect indulgence. They remind me of Snickers ice cream bars, but in bite form and much healthier…

Healthy Nut Butter Stuffed Dates
Ingredients
- 10-12 Medjool dates
- 1/4 cup peanut (or any other nut or seed) butter
Chocolate Coating
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
- 1/2 cup peanuts, crushed
Instructions
- Slice each date in half length wise, making sure not to cut all the way through. Peel the date open a bit and remove the pit and little stem at the top if there is one. Discard the pits.Place the sliced dates onto a piece of parchment paper. Scoop a teaspoon of peanut butter into the middle of each date. This can be somewhat drippy depending on the brand of peanut butter you use.You can also use a piping bag/ zip lock bag to stuff the sliced date.Consider using the piping bag method if you are making more than 6 dates. Even though its an extra step, the piping bag makes it super easy to fill up the dates.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once the chocolate is melted, it is time to dip the dates. Use a toothpick and push it completely through the center of the date to allow you to pick up and dunk the date in the melted chocolate. You can leave the tooth pick inserted in the date as it will keep the filling together plus make it easy for you to eat the dates.Or you can gently roll each date in the chocolate until fully covered, using a fork to hold it. Or you can skewer each date like a popsicle and dunk them in the melted chocolate. You can either dip and coat it completely or dip half. I like to dip half because I think it’s the perfect balance of flavors.Let the excess chocolate drip off the date and then place back onto the parchment lined baking sheet. After you place each date back onto the baking sheet, sprinkle the tops with crushed peanuts and a sprinkle of flaky salt if desired and place back in the freezer until hardened, 15-20 minutes.Keep stored in the freezer. But allow them to soften slightly after removing from the freezer before enjoying - about 5 minutes.TIP: Work quickly as the melted chocolate will harden quickly!
