Ingredients
- 1 cup oats, instant or quick
- 1/2 cup desiccated coconut, plus 1/3 cup extra for rolling
- 1/2 cup almond or cashew butter
- 1/4 cup almond flour
- 2 tablespoons honey or maple syrup
- 2 tablespoons coconut oil, melted
- 1-2 lemons, juice and zest (depending on how lemon-y you prefer)
- 1/8-1/4 teaspoon turmeric powder for color
Instructions
- In a mixing bowl combine oats, coconut, almond butter, almond flour, honey, coconut oil, lemon juice and zest and turmeric powder. Mix well until all ingredients are fully combined and until get a soft, sticky mixture that you can easily roll into balls.These lemon balls are quite citrusy and not overly sweet. I recommend tasting and adjusting the sweetness to your liking before forming the balls. Add more honey or lemon if you think its needed.Using a tablespoon, scoop the mixture and roll it into 12 bite-sized balls.Roll each energy bite in extra shredded coconut for added texture.Place the bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.Store the energy bites in an airtight container in the fridge for up to 1 week.
