I’m a huge fan of Greek yogurt to fuel my active lifestyle. It’s high in protein to help me build and repair muscle and promote satiety. It provides probiotics for gut health, it’s a good source of calcium to keep my bones strong. I also love that rich, creamy taste and the versatility to eat right out of the carton or to use in all sorts of sweet and savory recipes.

These frozen yogurt bites are my favorite way to satisfy my sweet tooth while fueling my body with better-for-you ingredients. They have lots of sweet chocolate peanut butter flavor and a creamy crunchy consistency like some of my favorite candies but are high in protein and low in added sugar for a healthy dessert I feel good about savoring.

Ingredients

Base Crust

  • 1 cup oats, instant or quick
  • 1/4 cup almond (or any nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon cinnamon

Yogurt Filling

  • 1 1/2 cups plain Greek yogurt
  • 1/2 cup protein or collagen powder
  • 2 tablespoons peanut butter
  • 1 tablespoon honey or maple syrup
  • 1/2 banana, chopped
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Topping

  • 1 tablespoon peanut butter
  • 1 tablespoon crushed peanuts 
  • Sliced banana

Instructions

Base Crust

  • Mix the oats, cinnamon, almond butter, honey and vanilla extract together in a bowl until it forms a sticky dough. (If the dough feels really dry, add more almond butter and honey.)
    Line a 12 muffin pan with muffin liners and add a spoonful of the base crust into the bottom of each muffin cup and press into place.

Yogurt Filling

  • Mix the yogurt, peanut butter, honey, chopped bananas and vanilla. Add a spoonful of the yogurt to each cup to fill to around 3/4 of the way to the top.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Top each cup with a teaspoon of peanut butter and a teaspoon (or more) of melted chocolate and swirl together. Add a slice of banana and a sprinkle of peanuts.
    Freeze for 1-2 hours (not longer or ice crystals will form), and then enjoy or transfer to an airtight container.
    OR instead of freezing, you can keep them in the refrigerator for convenient little yogurt cups (will be yogurt texture if kept in the fridge)
  • Tip! Make Ahead Of Time
    I like to prepare these yogurt cups a day in advance and leave them in the freezer overnight. Then, they are ready to grab and go in the morning and thaw perfectly in lunchboxes so they are ready to eat by lunchtime.
