Ingredients
Base Crust
1cupoats, instant or quick
1/4cupalmond (or any nut or seed) butter
2tablespoonshoney or maple syrup
1/2teaspooncinnamon
Yogurt Filling
1 1/2cupsplain Greek yogurt
1/2cupprotein or collagen powder
2tablespoonspeanut butter
1tablespoonhoney or maple syrup
1/2banana, chopped
1teaspoonvanilla extract
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
Topping
1tablespoonpeanut butter
1tablespooncrushed peanuts
Sliced banana
Instructions
Base Crust
Mix the oats, cinnamon, almond butter, honey and vanilla extract together in a bowl until it forms a sticky dough. (If the dough feels really dry, add more almond butter and honey.) Line a 12 muffin pan with muffin liners and add a spoonful of the base crust into the bottom of each muffin cup and press into place.
Yogurt Filling
Mix the yogurt, peanut butter, honey, chopped bananas and vanilla. Add a spoonful of the yogurt to each cup to fill to around 3/4 of the way to the top.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Top each cup with a teaspoon of peanut butter and a teaspoon (or more) of melted chocolate and swirl together. Add a slice of banana and a sprinkle of peanuts. Freeze for 1-2 hours (not longer or ice crystals will form), and then enjoy or transfer to an airtight container.OR instead of freezing, you can keep them in the refrigerator for convenient little yogurt cups (will be yogurt texture if kept in the fridge)
Tip! Make Ahead Of TimeI like to prepare these yogurt cups a day in advance and leave them in the freezer overnight. Then, they are ready to grab and go in the morning and thaw perfectly in lunchboxes so they are ready to eat by lunchtime.
