Ingredients

  • 1 cup almonds, unsalted, roasted
  • 3/4 cup dried cranberries
  • 1 cup chocolate chips
  • 2 teaspoons coconut oil
  • 1/3-1/2 teaspoon sea salt, to taste

Instructions

  • If you need to toast your almonds, preheat oven to 300°F. Line a baking sheet with parchment paper or use a silicone baking mat. Spread almonds out in a single layer and toast for 10-12 minutes, stirring once during that time. Set aside.
Line a small or medium baking sheet with wax paper or parchment paper. Set aside.
Melt the chocolate - Place chocolate chips and coconut oil in small dish and microwave at 50%power with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Fold almonds and cranberries into the chocolate, making sure to coat each one. Using a spoon, scoop and drop piles of chocolate-covered almonds to create clusters onto the baking sheet, evenly spaced apart. (Spoonful can be as large or small as you’d like. My clusters had about 8-10 almonds each in them.)
Sprinkle with a little sea salt then allow chocolate to completely set.
Chill in the refrigerator, for 15-25 minutes.
Store chocolate covered almonds in the refrigerator for up to 4 weeks.
