Ingredients
- 1 cup almonds or walnuts
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup oats, instant or quick
- 1/2 cup desiccated coconut
- 1/2 cup seeds – hemp, chia, pumpkin, sunflower
- 1/2 cup dried cherries, blueberries, cranberries (or a mix)
- 1/2 cup peanut (or any other nut) butter
- 1/4 cup coconut oil
- 1-2 tablespoons honey or maple syrup (if you feel it needs it)
- 1 teaspoon vanilla extract
Topping
- 2 tablespoons chopped almonds
- 2 tablespoons dried cherries, berries
- 1 tablespoon pumpkin seeds
Instructions
- Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place nuts into a food processor and process until broken down and crumbly. Add dates, oats, coconut and continue to process until well combined into a sticky dough.Lastly. add seeds, dried fruit, nut butter, coconut oil, honey and vanilla and pulse a few times to combine.Be careful not to over process as its nice to have texture variance and different sized “bits” in your bars.Scoop the mixture out into the lined baking pan and spread out evenly with a spatula or back of a spoon. Scatter the top with chopped nuts, dried fruit and pumpkin seeds and press down into the surface to stop them falling off when you are eating them.Place in fridge to firm up then remove bars from baking pan with parchment paper handles and cut into 12-16 bars or squares depending on the size you prefer.Store in the fridge for up to a week or in the freezer for up to 3months.
