Tropical Fruit White Chocolate Bark

I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention.
One of them that is making a huge buzz is around what is called “bark” - layers of yummy foods placed in flat layers on top of each other then frozen. Once frozen the “bark”it is broken or cut into squares.
The bottom layer is usually something that can be laid flat like chocolate, cottage cheese, banana slices, strawberries slices or even dates. Then layers of yummy things like dried fruit, nuts, seeds, nut butter and coconut is added to create a simple and healthy dessert or snack.
I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this viral white chocolate bark is definitely a winner.
We are going the Aloha route with this recipe, toasted coconut, salty roasted macadamia nuts (OH BOY!) and we add the yellow and orange jewel tones of dried pineapple and mango, all wrapped in creamy white chocolate.
One bite and you will be dancing the hula and this healthy sweet treat will transport you to a tropical island. Is that even possible? Maybe. The subtle hint of lime zest in the recipe makes it uber tropical! An island vacation, melt in your mouth candy bark that is loaded with all the flavors of the tropics.
When it comes to snacks I always go to dried fruits and granola. You might be like me, in that on some days I need something on the sweeter side. This is where this tropical pineapple white chocolate bark recipe comes to play it big for me.
You could make different batches with your favourite flavour combinations. I highly recommend candied ginger if you have it. I’m going to add it to the next batch because I have some pantry stocking to do….
Chocolate bark is the easiest treat to make. Just melt, mix, spread and you are done! Plus, it makes a great gift!

Ingredients

  • 16 oz white chocolate chips or chocolate bars chopped
  • 1 cup macadamia nuts, toasted, salted, chopped
  • 3/4 cup dried pineapple, chopped
  • 3/4 cup dried mango, chopped
  • 1/2 cup shredded coconut, toasted
  • 1 teaspoon grated lime zest

Instructions

  • Line a 10 x15-inch rimmed baking pan or sheet with parchment paper. Or use a silicon baking mat.
    Place chocolate chips in a medium sized dish and microwave at 50% power with 30-40 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - Place white chocolate in a heatproof bowl set over (not in) a saucepan of simmering water. Heat, stirring occasionally, until smooth, 4 to 6 minutes.
    Mix half of all of the ingredients into the melted chocolate and stir until evenly coated with the white chocolate. Pour onto the parchment paper and spread out. Don’t spread it out too thin, you want it to be about ½ inch thick.
    Quickly top with remaining fruit, nuts and coconut and press lightly into the bark. Place in the refrigerator for at least 20 minutes.
    When ready to serve, break apart with hands or cut into 2 inch pieces with a knife.
    Store at room temperature in an airtight container, up to 1 week.
