Strawberry Protein Chia Pudding
A sweet but healthy treat – strawberries and cream chia seed pudding.Strawberries are just one of the magical ingredients that can make everything good! So, here is one simple recipe that is super easy and doesn’t take a lot of time! This strawberry chia pudding tastes like dessert for breakfast. It's made with a few ingredients, healthy, creamy, a delightful protein filled breakfast, snack or dessert!This recipe is packed with nutrients for the perfect make-ahead breakfast or snack with 31g of protein to start your day off right.One recommendation I always give as a fitness professional is to try and get at least 25-30g of protein at every meal- and yes, that includes breakfast! In fact, spreading protein intake throughout the day allows our body to utilize it most efficiently.With that said, I totally get that people struggle with protein at breakfast. I get asked all the time for high protein breakfasts that aren't eggs, and some of my faves are cottage cheese, avocado toast,protein pancakes, and high protein oatmeal. But if you're looking for something new, this protein chia pudding is pretty delicious.Chia seeds are such a nutritional powerhouse. I love including them in my super seed mix for this reason, because they're loaded with TONS of fibre and a bit of protein and healthy fats. Combined with a few other yummy ingredients, this protein chia pudding is a great nutrient-dense way to start your day.Why I love this recipe:High in protein. We have three sources of protein powder here: chia seeds, Greek yogurt and protein powder. Protein is the most satiating macronutrient. Combined with fibre and healthy fats, this is a breakfast that will hold you over all morning.Easy to make – all you need is five to ten minutes to blend everything together, then store them in the fridge for the next day. When I know I’ll have a busy morning, I make sure to prep these the night before so I don’t skip breakfast as part of how I take care of myself is by prepping breakfast ahead of time.Versatile – you can easily mix and match different ingredients, mix-ins, and toppings to switch up the flavor and really make this recipe your own. I love to add whatever I have on hand in the pantry at the time!Packed with things I need (and you too) – this chia pudding has fiber, healthy fats, and, of course, protein! I love using it as a way to get in a bit of extra nutrition in my morning and topped with whipped coconut cream it makes a delicious and super healthy breakfast or dessert.

Ingredients
- 1 cup strawberries, fresh or frozen plus some for garnish
- 1/2 cup milk of choice
- 1 scoop protein powder of choice (optional, this just adds more protein)
- 1/4 cup plain Greek yogurt
- 1 tablespoon almond butter
- 1/4 cup chia seeds
- 1 teaspoon honey
- 1 teaspoon vanilla extract
Toppings
- Whipped Coconut Cream – store bought or recipe below in notes
- Granola, nuts or seeds
- Toasted coconut
- Fresh fruit or berries
Instructions
- Add all ingredients to a food processor and process until well combined, smooth and creamy.Pour the pudding into 2 jars or dishes, seal or cover and place in the fridge for at least 1 hour.The chia seeds will soak up the liquid and thicken to a pudding-like consistency. The longer you leave it, the thicker it will become. It's ready to enjoy after an hour but overnight is ideal.Before serving top with whipped coconut cream (recipe below in notes) and sliced fresh strawberries or any other toppings.
