Strawberry Protein Chia Pudding

A sweet but healthy treat – strawberries and cream chia seed pudding. Strawberries are just one of the magical ingredients that can make everything good! So, here is one simple recipe that is super easy and doesn’t take a lot of time! This strawberry chia pudding tastes like dessert for breakfast. It's made with a few ingredients, healthy, creamy, a delightful protein filled breakfast, snack or dessert!

Ingredients

  • 1 cup strawberries, fresh or frozen plus some for garnish
  • 1/2 cup milk of choice
  • 1 scoop protein powder of choice (optional, this just adds more protein)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon almond butter
  • 1/4 cup chia seeds
  • 1 teaspoon honey
  • 1 teaspoon vanilla extract

Toppings

  • Whipped Coconut Cream – store bought or recipe below in notes
  • Granola, nuts or seeds
  • Toasted coconut
  • Fresh fruit or berries

Instructions

  • Add all ingredients to a food processor and process until well combined, smooth and creamy.
    Pour the pudding into 2 jars or dishes, seal or cover and place in the fridge for at least 1 hour.
    The chia seeds will soak up the liquid and thicken to a pudding-like consistency. The longer you leave it, the thicker it will become. It's ready to enjoy after an hour but overnight is ideal.
    Before serving top with whipped coconut cream (recipe below in notes) and sliced fresh strawberries or any other toppings.
