Berrylicious Vanilla Swirl Bars
These creamy layered bars are simple to make and are a total stunner! A nut, coconut-based snack/dessert that tastes as good as they look!Made using cashews and coconut cream to make a ultra creamy filling topping an almond cocoa crust. The berry filling is a delicious combination of blueberry and vanilla swirled together that is served in a semi-Fredo (semi-frozen) state.The recipe uses frozen blueberries for convenience and is made without any refined white sugar or eggs. They add an amazing sweet yet tangy fruit flavor that pairs so well with the vanilla cream swirl.The berries could also be experimented with – try swapping the blueberries for raspberries or blackberries and the nuts could be swapped out for different flavor (and color) combinations.You can keep these slices in the freezer and have a square anytime you please. Ingredients
Nutty Base Crust
- 1 cup almonds or walnuts or a mix
- 1/2 cup dates, soaked at least 30 minutes and drained
- 1/2 cup oats, instant or quick
- 1/2 cup desiccated coconut
- 1/4 cup cocoa or cacao powder
- 1 teaspoon vanilla extract
Vanilla & Blueberry Filling
- 2 cups cashews, soaked 3+ hours and drained
- 1 13,5 oz coconut cream, full fat (solid part only) *see note below
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 lemon, juice and zest
- 1 1/2 cups blueberries, fresh or frozen (drained)
Instructions
Nutty Base Crust
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Make the crust first. Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place almonds and coconut into a food processer and process until broken down and crumbly. Add dates and vanilla and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your cheesecake base.Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the filling.
Vanilla & Blueberry Filling
- Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Place all filling ingredients, cashews, coconut cream, coconut oil, honey and lemon juice and zest into the food processor and process until smooth and creamy. Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth. Taste test add more honey or lemon if you think it needs it.Scoop out half the mixture into a bowl and set aside.Add the blueberries to the remaining mixture and blend until well combined.Using a spoon, add spoonful’s of the vanilla and blueberry mixture randomly into the pan on top of the chilled base crust.Use a knife to swirl together and create a marble effect.Place in the freezer for 4 hours or overnight. Remove bars from pan and cut into 8-16 bars or squares depending on the size you prefer.Remove from the freezer 5-10 minutes before serving,
