Vanilla Walnut Fudge

This delicious walnut fudge is healthy, creamy, sweet, and comes with a nutty flavor that will make you fall in love from the first bite.
Chopped walnuts add the perfect nutty dimension and crunchy texture to this smooth fudge. Its full of vanilla flavour, plus it’s loaded with vitamins, minerals and healthy fats.
This fudge recipe has a unique texture all on its own. It's ever so soft and almost dissolves in your mouth. One piece is never enough. A quick and easy holiday treat, this is a foolproof recipe that is great for snacking or gift giving!

In just a few minutes, you can stir this vanilla fudge recipe together and have it chilling in the refrigerator. Within a couple of hours, your fudge will be firm enough to slice and serve.
Super simple to make, it comes together pretty quickly and tastes AMAZING!

Ingredients

  • 1 cup walnuts, roughly chopped
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup coconut butter, store bought or recipe below in notes
  • 1/4 cup almond (or any other nut or seed) butter
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon vanilla extract

Instructions

  • Toast the walnuts for extra flavour -  simply place walnuts in a small pan over medium heat for about 3-4 minutes or until lightly brown and fragrant.
    Line a loaf pan - 10 x 4” with parchment paper,taking it over the top and sides to act as a handle so removing the fudge for cutting is easy. Or you can use silicon candy molds or even an ice cube tray.
    Place the coconut butter, almond butter and honey into a medium saucepan and gently heat over a low heat until melted.
    Place dates into a food processor and process until they are smooth. Then add them to the saucepan with the melted butter, honey mixture along with vanilla extract and chopped walnuts and mix until well combined - (this saves you from washing another bowl!)
    Place into your lined pan or molds and spread out evenly with a spatula or back of a spoon.
    Freeze for about 1 hour, or until solid. Slice into small squares or pop out of molds and prepare to be seduced.
