There is something incredibly comforting about the combination of chocolate and coconut. Rich cocoa, naturally sweet coconut, and a soft, chewy texture create a treat that feels wonderfully indulgent, yet can easily be made with wholesome ingredients. These Chocolate Coconut Protein Bars are proof that healthy snacks don’t have to be boring. They are fudgy, satisfying, packed with protein, and come together in minutes – no oven required.
At Blended Bites, we are all about creating treats that taste like dessert while nourishing your body. These bars fit that philosophy perfectly. They are naturally sweetened, made with simple pantry staples, and loaded with ingredients that provide lasting energy rather than a quick sugar rush.
The star of the recipe is, of course, cocoa. Unsweetened cocoa powder gives these bars their rich chocolate flavour while providing antioxidants and minerals like magnesium. Unlike overly sweet chocolate snacks, the cocoa creates a deep, sophisticated flavour that is beautifully balanced by the natural sweetness of dates and maple syrup.
Coconut plays an equally important role. Desiccated coconut gives these bars their signature chewy texture and delicate tropical flavour, while coconut oil helps bind everything together into soft, fudgy squares. Coconut is also a wonderful source of healthy fats, making these bars satisfying enough to curb those afternoon cravings.
Then comes the ingredient that transforms these from a simple snack into a functional one – protein powder.
Adding protein powder boosts the nutritional value without changing the delicious flavour. Protein helps keep you feeling fuller for longer, supports muscle repair after exercise, and provides sustained energy throughout the day. Whether you enjoy these bars after a workout, pack one into your lunchbox, or grab one with your afternoon coffee, they are a delicious way to add more protein to your day.
Naturally sweet dates help hold everything together while adding caramel-like sweetness and fibre. Unlike refined sugar, dates bring nutrients along with their sweetness, making them one of our favourite ingredients for no-bake treats. Combined with creamy almond butter, they create a rich texture that is soft enough to bite into but firm enough to slice neatly.
One of the things you will love most about these bars is how quick they are to prepare. Everything goes into a food processor, is pressed into a pan, and chilled until firm. That’s it! No baking, no complicated techniques, and very little washing up afterwards.
These bars are also incredibly versatile. They are delicious straight from the fridge, but even more indulgent with a drizzle of melted dark chocolate over the top. You can stir in chopped almonds for crunch, sprinkle over extra coconut, or even add a pinch of flaky sea salt for a gourmet finish.
They are perfect for meal prep too. Make a batch on the weekend and you will have healthy snacks ready for the week ahead. They keep beautifully in the refrigerator and freeze exceptionally well, so there is always something wholesome waiting whenever a chocolate craving strikes.
Whether you are looking for a healthier dessert, a nourishing afternoon snack, or a post-workout bite, these Chocolate Coconut Protein Bars deliver everything you could want. Rich chocolate flavour, chewy coconut texture, wholesome ingredients, and a satisfying protein boost all come together in one delicious little bar.

Chocolate Coconut Protein Bars
Ingredients
- 1 1/2 cups Medjool dates, pitted (if you are using dried, hard dates, soak for 10 minutes in warm water and drain)
- 1 1/2 cups desiccated coconut
- 1/2 cup almond butter
- 2 scoops chocolate or vanilla protein powder
- 1/4 cup cocoa powder
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of sea salt
Chocolate Topping
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place the dates in a food processor and process until they form a sticky paste.Add the desiccated coconut, almond butter, protein powder, cocoa powder, melted coconut oil, vanilla, and sea salt.Blend until the mixture is well combined and holds together when pressed. If it is too dry, add a teaspoon or two of water or another spoonful of almond butter. Press the mixture firmly into the prepared pan, smoothing the top with the back of a spoon or an offset spatula.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, spread over the bars.Refrigerate for at least 2 hours, or until firm.Slice into 8-10 bars or more smaller squares.Store in an airtight container for up to 1 week or freezer for up to 3 months.Thaw for 10–15 minutes before serving.Optional VariationsStir chopped almonds or walnuts into the mixture for added crunch.Replace almond butter with cashew butter for a milder flavour.Add a teaspoon of espresso powder to intensify the chocolate.Sprinkle with flaky sea salt for a delicious sweet-and-salty finish.
