1 1/2cupsdesiccated coconut
1/2cupalmond butter
2scoopschocolate or vanilla protein powder
1/4cupcocoa powder
2tablespoonscoconut oil, melted
1teaspoonvanilla extract
Pinch of sea salt
Chocolate Topping
1cupdark chocolate chips
1tablespooncoconut oil
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place the dates in a food processor and process until they form a sticky paste.Add the desiccated coconut, almond butter, protein powder, cocoa powder, melted coconut oil, vanilla, and sea salt.Blend until the mixture is well combined and holds together when pressed. If it is too dry, add a teaspoon or two of water or another spoonful of almond butter. Press the mixture firmly into the prepared pan, smoothing the top with the back of a spoon or an offset spatula.
Chocolate Topping
