Why You Will Love These Vanilla Protein Pudding Cups

No cook, no bake: Simply mix, portion, and chill.
Protein-rich: Protein powder adds a convenient protein boost.
Perfect for meal prep: Make several individual servings at once.
Easy to customise: Choose your favourite milk, yogurt, protein powder, and toppings.
Endlessly versatile: Enjoy as breakfast, an afternoon snack, or dessert.

They are also a great option when you want something sweet but don’t feel like making an elaborate recipe.

Choose Your Creamy Base

One of the best things about this recipe is that you can adapt it to suit your preferences.

Greek yogurt: This creates a thick, creamy pudding with a naturally tangy flavour and additional protein. It’s my first choice if you are looking for a particularly satisfying snack.
Coconut milk: Full-fat canned coconut milk creates a richer, creamier pudding with a subtle tropical flavour. Choose a thick variety for the best texture.
Coconut cream: For an extra-indulgent pudding, use coconut cream. It creates a velvety texture that feels wonderfully dessert-like.

You can also combine yogurt with a little coconut cream for the best of both worlds.

Delicious Topping Ideas 🍓🍫

Fresh Berry Bliss – Strawberries, blueberries, raspberries, and a sprinkle of chia seeds.
Chocolate Lover’s – Dark chocolate shavings, cacao nibs, and a drizzle of melted chocolate.
Peanut Butter Cup – Peanut butter drizzle, chopped peanuts, and mini dark chocolate chips.
Tropical Coconut – Toasted coconut flakes, diced mango, and a little lime zest.
Banana Bread – Sliced banana, crunchy granola, cinnamon, and chopped walnuts.
Raspberry Almond – Fresh raspberries, almond butter, and toasted flaked almonds.

Other delicious combinations include apple and cinnamon, lemon zest and blueberries, crushed pistachios and honey, crushed freeze-dried strawberries, cacao nibs and hazelnuts, or a spoonful of your favourite homemade fruit compote.

Make Them Your Own

You can change the flavour of these pudding cups simply by switching the protein powder. Chocolate, strawberry, banana, and salted caramel all work beautifully. You can even layer the vanilla pudding with chocolate pudding to create a two-tone dessert. For extra texture, fold in a tablespoon of chia seeds and allow the mixture to thicken before portioning. Remember that chia seeds absorb liquid, so you may need a little extra milk.

A Simple Treat to Keep in the Fridge

These Vanilla Protein Pudding Cups make healthy snacking easy. They are creamy, convenient, and endlessly customisable, with plenty of ways to add fruit, nuts, seeds, and other nourishing ingredients.

Make a batch, experiment with different toppings, and discover your favourite combination. It’s a simple way to bring a little more protein and pleasure into your everyday routine – without spending hours in the kitchen. ✨

Servings 4

Ingredients

  • 2 cups thick Greek yogurt, or thick coconut milk or coconut cream
  • 1/2 cup vanilla protein powder
  • 2-4 tablespoons milk of choice, as needed
  • 1-2 tablespoons maple syrup or honey, optional
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  • Add your chosen yogurt or coconut base to a mixing bowl. Add the vanilla protein powder, vanilla extract, sea salt, and maple syrup or honey if using.
Whisk thoroughly until the protein powder is completely incorporated. Add milk a tablespoon at a time until you reach your preferred pudding consistency. Different protein powders absorb different amounts of liquid, so adjust as needed.
Add a little more vanilla or sweetener if desired. If your protein powder is already sweetened, you may not need any additional sweetener.
Divide the pudding between four small jars or lidded containers. Smooth the tops and add any toppings that are suitable for storing ahead.
Refrigerate for at least 30 minutes to allow the flavours to develop and the pudding to thicken.
Add fresh or crunchy toppings just before serving for the best texture.
    Meal Prep and Storage
Store the pudding cups in sealed containers in the refrigerator for up to 3 days, using fresh ingredients and following the storage guidance for your chosen yogurt or coconut product. Stir before serving if needed.
For the best results, keep toppings such as granola, nuts, and cacao nibs separate until you are ready to eat. This prevents them from becoming soft.
Freezing is not recommended for the best creamy texture, particularly with yogurt-based puddings.
