Ingredients

  • 2 cups thick Greek yogurt, or thick coconut milk or coconut cream
  • 1/2 cup vanilla protein powder
  • 2-4 tablespoons milk of choice, as needed
  • 1-2 tablespoons maple syrup or honey, optional
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  • Add your chosen yogurt or coconut base to a mixing bowl. Add the vanilla protein powder, vanilla extract, sea salt, and maple syrup or honey if using.
    Whisk thoroughly until the protein powder is completely incorporated. Add milk a tablespoon at a time until you reach your preferred pudding consistency. Different protein powders absorb different amounts of liquid, so adjust as needed.
    Add a little more vanilla or sweetener if desired. If your protein powder is already sweetened, you may not need any additional sweetener.
    Divide the pudding between four small jars or lidded containers. Smooth the tops and add any toppings that are suitable for storing ahead.
    Refrigerate for at least 30 minutes to allow the flavours to develop and the pudding to thicken.
    Add fresh or crunchy toppings just before serving for the best texture.
    Meal Prep and Storage
    Store the pudding cups in sealed containers in the refrigerator for up to 3 days, using fresh ingredients and following the storage guidance for your chosen yogurt or coconut product. Stir before serving if needed.
    For the best results, keep toppings such as granola, nuts, and cacao nibs separate until you are ready to eat. This prevents them from becoming soft.
    Freezing is not recommended for the best creamy texture, particularly with yogurt-based puddings.
