Cake Batter Protein Bark

Cake Batter Protein Bark

Who says cake is only for birthdays? If you are someone who loves the nostalgic flavour of cake batter and the fun of colourful sprinkles, this Cake Batter Protein Bark is about to become your new favourite healthy treat.

It has everything you love about licking the cake batter bowl as a kid – sweet vanilla flavour, creamy white chocolate, and cheerful rainbow sprinkles – but it is transformed into a nourishing, protein-packed snack you can enjoy any day of the week.

The base is made with wholesome oat flour, creamy nut butter, protein powder, and natural sweetener, creating a soft, cookie dough-like layer that is rich, satisfying, and surprisingly filling. A smooth layer of white chocolate finishes everything off, while a generous scattering of sprinkles makes every piece feel like a celebration.

Best of all, there is no baking required. Simply mix, chill, slice, and enjoy.

Why You Will Love This Recipe

There are plenty of protein bars on supermarket shelves, but many contain long ingredient lists, artificial sweeteners, or preservatives. Making your own means you know exactly what’s going into every bite.

This recipe is:

No bake and incredibly easy
High in protein
Naturally sweetened
Perfect for meal prep
Fun enough for kids and adults alike
Great for birthdays, parties, or everyday snacking

It is proof that healthy eating doesn’t have to be serious. Sometimes nourishing yourself can be colourful, playful, and delicious too.

The Secret to That Cake Batter Flavour

The classic cake batter flavour comes from a combination of vanilla, creamy oat flour, and white chocolate. Together they create that unmistakable birthday cake taste without needing an actual cake mix.

The oat flour gives the bark a soft, chewy texture that is similar to edible cookie dough, while the protein powder helps make each piece far more satisfying than traditional sweets.

The colourful sprinkles are optional – but highly recommended. They add that little touch of fun that makes these bars impossible not to smile at.

Perfect For Meal Prep

This bark stores beautifully in both the fridge and freezer.

Make a batch on the weekend and break off pieces whenever you’re craving something sweet. It’s ideal as an afternoon snack, post-workout treat, lunchbox addition, or healthier dessert after dinner.

Because it’s served straight from the fridge, the bark has a lovely firm bite that softens perfectly as you eat it.

Celebrate Every Day

One of the wonderful things about healthy treats is that they do not have to feel like a compromise. This Cake Batter Protein Bark delivers all the joy of birthday cake flavours while providing wholesome ingredients that leave you feeling satisfied instead of sluggish.

It is colourful enough for celebrations, simple enough for busy weekdays, and delicious enough that everyone will be reaching for another piece.

Whether you are making it for kids, sharing it with friends, or simply treating yourself, this cheerful little bark is a reminder that healthy eating can be every bit as fun as it is nourishing.

Because at Blended Bites, we believe the sweetest moments are even better when they are made with ingredients that love you back. ✨

I love that dessert barks are so easy to make, require minimal cleanup, and swap out heavy refined sugars for nutrient-rich alternatives. Below are three variations: a protein-packed yogurt base, an antioxidant-rich dark chocolate base, and a viral fruit and nut base.🌸

White Chocolate Topping

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Extra rainbow sprinkles
  • Freeze-dried raspberries
  • Crushed macadamias

Instructions

Cake Batter Base

  • Line a 7 x 5-inch loaf pan or small square dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
In a medium bowl, combine the oat flour, protein powde, and sea salt.
Add the almond butter, maple syrup, melted coconut oil, vanilla and milk.
Mix until a soft cookie dough forms.
    Fold through the rainbow sprinkles.
Transfer the mixture into the prepared pan and press firmly into an even layer.
Place in the refrigerator while preparing the topping.

White Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Once melted, pour over the chilled base and spread evenly.
Sprinkle extra rainbow sprinkles over the top before the chocolate sets.
Refrigerate for 1–2 hours until completely firm.
Lift from the pan and either slice into 10-12 bars or break into rustic bark pieces.
Store in an airtight container in the refrigerator for up to one week or freeze for up to two months.
    Tips & Variations
Swap oat flour for almond flour for a softer texture.
Use dairy-free white chocolate to make the recipe vegan-friendly.
Add chopped macadamias for extra crunch.
Mix white chocolate chips directly into the base for even more sweetness.
Add a few drops of natural almond extract for a bakery-style cake flavour.
