If you love the combination of chocolate, dates, walnuts and nut butter, you are going to want to keep these **Chocolate Date Walnut Protein Bites** in your freezer at all times.
They are tiny, they are decadent, they are wonderfully chewy and creamy – and they taste remarkably like little chocolate caramel cups. Best of all, they are made with simple ingredients and can be prepared in an ice cube tray, so there is no baking, complicated equipment or fiddly shaping involved.
A soft, naturally sweet date sits between creamy nut butter and rich chocolate, while a scoop of protein powder gives these little treats an extra boost of protein. The result is a bite-sized snack that feels like candy but fits beautifully into a nourishing, everyday way of eating.
This is exactly the kind of recipe we love at Blended Bites.
Why You Will Love These Little Bites
Sometimes you don’t want a whole dessert. You just want **a little something sweet**.
That is where these Chocolate Date Protein Bites shine. Because they are made in individual ice cube compartments, they are perfectly portioned and easy to grab whenever a chocolate craving appears. Keep them frozen and you have a stash of homemade treats ready whenever you need one.
The combination of textures is particularly delicious. The chocolate becomes firm and snappy when chilled. The date underneath is soft and chewy, with a naturally caramel-like sweetness, while the nut butter adds creamy richness.
And then there is the protein.
Adding protein powder helps transform what could otherwise be simply a sweet treat into something more satisfying.
Dates: Nature’s Little Caramels
Medjool dates are one of our favourite ingredients for no-bake treats. They are naturally soft, sticky and wonderfully sweet, with a flavour that’s surprisingly similar to caramel. That makes them perfect for creating healthier versions of classic candy bars and desserts. They also provide fibre and a range of naturally occurring nutrients, making them a useful ingredient when you’re looking for sweetness without relying entirely on refined sugar.
For this recipe, choose soft Medjool dates if possible. If your dates are particularly firm, a quick soak in hot water will soften them beautifully. And you don’t need many.
That’s another thing we love about these bites – the dates provide plenty of natural sweetness in a very small package.
Walnuts are a nutritional powerhouse, add a rich, nutty flavor and are packed with nutrients such as healthy fats, protein, fiber, vitamins, and minerals, walnuts are one of the healthiest nuts you can add to your daily diet. Whether you wish to boost brain power, improve heart health, or simply add a crunch to a dish, walnuts are a fantastic choice.
Protein Makes Them More Satisfying
The original style of chocolate date bites is wonderfully simple, but adding protein powder gives this Blended Bites version another dimension.
Protein is an important part of a satisfying snack because it helps keep you feeling full and supports the body’s muscle maintenance and repair. Here, the protein powder is mixed directly into the melted chocolate. This keeps the recipe incredibly simple while distributing protein throughout every bite.
Vanilla protein powder works beautifully because it adds a subtle sweetness and complements the dates and nut butter.
Chocolate protein powder is another delicious option if you want an even richer chocolate flavour.
Depending on the protein powder you use, you may need a tiny bit more or less chocolate to achieve a smooth consistency.
The Ice Cube Tray Trick
This might be the easiest part of the whole recipe. Instead of rolling balls by hand or pressing the mixture into a large pan, simply use a **silicone ice cube tray**.
Start with a little melted chocolate in each cavity.
Add a piece of date.
Spoon in the nut butter.
Then cover everything with another layer of chocolate.
That’s it.
Once chilled, the bites pop straight out of a silicone tray and you are left with neat little chocolate-covered treats.
A standard ice cube tray creates small bites, but you can also use a larger silicone chocolate mold or mini muffin pan if you prefer slightly bigger portions.
Choose Your Favourite Nut Butter
Peanut butter is the classic choice and gives these bites a delicious chocolate-peanut butter-caramel flavour.
But don’t stop there.
Almond butter creates a slightly more delicate flavour, while cashew butter makes the filling particularly creamy. For a nut-free version, sunflower seed butter works beautifully.
Choose a natural nut or seed butter that’s relatively runny rather than one that’s very thick and dry. It will be much easier to spoon into the little molds.
Make Them Your Own
Once you have made the basic recipe, it is easy to create different versions.
Add a sprinkle of flaky sea salt for a salted chocolate caramel bite.
Top the chocolate with chopped roasted almonds.
Add shredded coconut for a chocolate coconut variation.
Try a tiny pinch of cinnamon for warmth.
Or add a little orange zest to the chocolate for a beautiful chocolate-orange combination.
You can even use white or milk chocolate if that is your preference.
The Perfect Freezer Treat
These little bites are ideal for keeping on hand for those moments when you want something sweet without making an entire dessert. Enjoy one after dinner with a cup of tea, grab one when afternoon cravings strike, or keep a few ready for a quick post-workout snack. They are also perfect for sharing because they are already individually portioned.
At Blended Bites, we believe healthy eating is not about saying no to treats.

Chocolate Date Walnut Protein Bites
Ingredients
Chocolate Layer
- 1 cup dark chocolate chips or chopped dark chocolate
- 1 tablespoon coconut oil
- 2 tablespoons chocolate or vanilla protein powder
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
Date, Walnut & Nut Butter Filling
- 6 soft Medjool dates, pitted
- 1/2 cup natural peanut butter, almond butter or cashew butter
- 1/2 cup walnuts, finely chopped
Optional Toppings
- Flaky sea salt
- Chopped roasted almonds
- Shredded coconut
- Cacao nibs
- Finely grated orange zest
Instructions
- If your dates are firm, place them in a bowl and cover with boiling water for 2–3 minutes. Drain well and pat dry. Remove the pits and cut each date in half.Finely chop the walnuts. You want small pieces that add texture without making the bites difficult to remove from the molds.Place the chocolate and coconut oil in a heatproof bowl. Microwave in 20-second bursts, stirring between each, until smooth. Alternatively, melt gently over a double boiler.Stir the protein powder, vanilla and sea salt into the melted chocolate until completely smooth.Spoon approximately 1 teaspoon of the chocolate mixture into each cavity of a silicone ice cube tray.Place half a Medjool date into each cavity, pressing gently into the chocolate.Sprinkle approximately 1 teaspoon of chopped walnuts over each date.Spoon approximately 1 teaspoon of nut butter over the walnuts and date in each cavity.Spoon the remaining melted chocolate over each bite, making sure the filling is completely covered.Sprinkle with extra chopped walnuts or flaky sea salt if desired.Place the tray in the freezer for 30–45 minutes, or until completely firm.Gently pop the bites from the silicone tray and enjoy.Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months. If frozen, allow the bites to sit at room temperature for a few minutes before eating if you prefer a softer date and nut-butter centre.Blended Bites Tips 💡For even more flavour, lightly toast the walnuts before chopping. Allow them to cool completely before adding them to the recipe. Toasting brings out their natural oils and gives the finished bites an especially delicious roasted-nut flavour.Silicone molds work best because the chocolate bites release easily once chilled. If you are using a rigid ice cube tray, lightly grease the cavities or line them with small strips of baking paper to make removal easier.
