Chocolate Date Walnut Protein Bites are delicious little no-bake treats made with soft Medjool dates,creamy nut butter, crunchy walnuts, protein powder and rich dark chocolate. Each bite has a satisfying combination of textures - a chewy caramel-like date, creamy nut butter, crunchy walnuts and a crisp chocolate coating. Ingredients

Chocolate Layer

  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 tablespoon coconut oil
  • 2 tablespoons chocolate or vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Date, Walnut & Nut Butter Filling

  • 6 soft Medjool dates, pitted
  • 1/2 cup natural peanut butter, almond butter or cashew butter
  • 1/2 cup walnuts, finely chopped

Optional Toppings

  • Flaky sea salt
  • Chopped roasted almonds
  • Shredded coconut
  • Cacao nibs
  • Finely grated orange zest

Instructions

  • If your dates are firm, place them in a bowl and cover with boiling water for 2–3 minutes. Drain well and pat dry. Remove the pits and cut each date in half.
    Finely chop the walnuts. You want small pieces that add texture without making the bites difficult to remove from the molds.
    Place the chocolate and coconut oil in a heatproof bowl. Microwave in 20-second bursts, stirring between each, until smooth. Alternatively, melt gently over a double boiler.
    Stir the protein powder, vanilla and sea salt into the melted chocolate until completely smooth.
    Spoon approximately 1 teaspoon of the chocolate mixture into each cavity of a silicone ice cube tray.
    Place half a Medjool date into each cavity, pressing gently into the chocolate.
    Sprinkle approximately 1 teaspoon of chopped walnuts over each date.
    Spoon approximately 1 teaspoon of nut butter over the walnuts and date in each cavity.
    Spoon the remaining melted chocolate over each bite, making sure the filling is completely covered.
    Sprinkle with extra chopped walnuts or flaky sea salt if desired.
    Place the tray in the freezer for 30–45 minutes, or until completely firm.
    Gently pop the bites from the silicone tray and enjoy.
    Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
    If frozen, allow the bites to sit at room temperature for a few minutes before eating if you prefer a softer date and nut-butter centre.
    Blended Bites Tips 💡
    For even more flavour, lightly toast the walnuts before chopping. Allow them to cool completely before adding them to the recipe. Toasting brings out their natural oils and gives the finished bites an especially delicious roasted-nut flavour.
    Silicone molds work best because the chocolate bites release easily once chilled. If you are using a rigid ice cube tray, lightly grease the cavities or line them with small strips of baking paper to make removal easier.
