Cool, Creamy & Bursting With Fresh Lemon Flavor
If you love desserts that are creamy and refreshing rather than rich and heavy, these Lemon Cream Frozen Protein Bites are going to be a freezer favorite.
Light, fluffy, citrusy, and wonderfully creamy, these little frozen treats combine whipped dairy cream or coconut cream with protein powder and plenty of fresh lemon zest. They are simple enough for everyday snacking but delicious enough to feel like a special dessert.
Think lemon mousse meets frozen cheesecake bites – with a protein-packed Blended Bites twist.
At Blended Bites, we believe healthy treats should be something you genuinely look forward to eating. Healthy eating is not about removing all the foods you love. It is about adding nourishing ingredients and finding delicious ways to enjoy them.
These lemon bites are a perfect example.
The recipe begins with whipped cream. If you eat dairy, heavy whipping cream creates a wonderfully airy and luxurious texture. It whips into soft, fluffy peaks that freeze beautifully while remaining creamy enough to bite into without becoming icy.
If you are dairy-free, full-fat coconut cream is a fantastic alternative. It creates a rich, velvety texture with a subtle coconut flavour that works beautifully with the bright lemon.
Then comes the protein powder. Protein powder does more than simply increase the protein content. It helps stabilise the whipped cream, giving the mixture structure so you can easily spoon or pipe it into bite-sized portions before freezing. It also makes these treats more satisfying.
Protein is an important part of a balanced diet because it helps support muscle maintenance and recovery and contributes to feelings of fullness. Adding it to sweet snacks is a simple way to make them more substantial and satisfying. That is especially useful when you want something sweet between meals.
Instead of reaching for a sugary treat that leaves you hungry again soon afterwards, you can grab a couple of these creamy frozen bites and satisfy your craving while adding protein to your day.
The star flavour, of course, is lemon.
Fresh lemon zest is the secret to making these bites taste bright and vibrant. Unlike bottled lemon flavouring, freshly grated zest contains aromatic oils that give you that unmistakable lemony fragrance and flavour.
For an even more intense citrus hit, you can add a small amount of fresh lemon juice. Just be careful not to add too much liquid, particularly when using whipped cream, as excess moisture can affect the texture.
And don’t forget the vanilla. A little vanilla extract rounds out the sharpness of the lemon and gives these bites a subtle creamy sweetness that makes them taste almost like lemon cheesecake.
In true Blended Bites style, this recipe is all about Addition Eating. We are not trying to make dessert disappear. We are adding protein and wholesome ingredients to create something that tastes delicious and leaves you feeling satisfied.
Another reason these little bites are so useful is their versatility.
Enjoy them straight from the freezer for a refreshing snack.
Drop one into hot tea for a creamy lemon twist.
Serve several alongside fresh berries for an easy dessert.
Add them to a smoothie bowl.
Top pancakes or waffles.
Or let one soften slightly and spoon it over warm baked fruit.
You can also customise them easily. Add poppy seeds for a lemon-poppy seed version. Fold through freeze-dried raspberries for a lemon-berry combination. Add shredded coconut for a tropical twist or drizzle the frozen bites with white chocolate for a more indulgent dessert.
For a stronger cheesecake flavour, add a tiny amount of cream cheese to the mixture before whipping.
They are also ideal for meal prep. Make a batch, freeze them, and you will have a delicious little treat waiting whenever you need one. Because they are portioned individually, there is no need to defrost an entire dessert. Just take out as many as you want.
The texture is wonderfully light and creamy. Straight from the freezer, they are firm enough to hold their shape, but they soften quickly in your mouth into a smooth, mousse-like bite. Fresh, creamy, tangy, and satisfying, these Lemon Cream Frozen Protein Bites are proof that simple ingredients can create something truly special.
They are sunshine in snack form. And that is exactly how we like our healthy treats at Blended Bites. โ๏ธ
