Ingredients

  • 1 1/2 cups heavy whipping cream or chilled full-fat coconut cream
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons powdered monk fruit sweetener, maple syrup, or honey, to taste
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon fresh lemon juice, optional
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Add-Ins

  • 1 tablespoon poppy seeds
  • 2 tablespoons freeze-dried raspberries
  • 2 tablespoons desiccated coconut
  • 1/4 teaspoon almond extract

Optional Toppings

  • Extra lemon zest
  • Freeze-dried berries
  • Toasted coconut
  • Chopped nuts
  • Melted white chocolate
  • Poppy seeds

Instructions

  • Chill a mixing bowl and beaters for about 10 minutes.
    Add the heavy cream or chilled coconut cream to the bowl.
    Whip until soft peaks begin to form.
    Add the protein powder, sweetener, vanilla, lemon zest, lemon juice if using, and salt.
    Continue whipping until firm peaks form and the mixture is light and fluffy.
    Fold through any optional add-ins.
    Transfer the mixture to a piping bag, or simply use a spoon.
    Pipe small dollops onto a baking paper-lined tray or spoon into silicone mini moulds.
    Sprinkle with your chosen toppings.
    Freeze for 2–3 hours, or until firm.
    Transfer the frozen bites to an airtight container for storage.
    Store in the freezer for up to 1 month. Allow the bites to sit at room temperature for 1–2 minutes before eating for a softer, creamier texture.
