1-2tablespoonspowdered monk fruit sweetener, maple syrup, or honey, to taste
1tablespoonfinely grated lemon zest
1teaspoonfresh lemon juice, optional
1teaspoonvanilla extract

Instructions
Chill a mixing bowl and beaters for about 10 minutes.Add the heavy cream or chilled coconut cream to the bowl.Whip until soft peaks begin to form.Add the protein powder, sweetener, vanilla, lemon zest, lemon juice if using, and salt.Continue whipping until firm peaks form and the mixture is light and fluffy.Fold through any optional add-ins.Transfer the mixture to a piping bag, or simply use a spoon.Pipe small dollops onto a baking paper-lined tray or spoon into silicone mini moulds.Sprinkle with your chosen toppings.Freeze for 2–3 hours, or until firm.Transfer the frozen bites to an airtight container for storage.Store in the freezer for up to 1 month. Allow the bites to sit at room temperature for 1–2 minutes before eating for a softer, creamier texture.
