These Mango Yogurt Frozen Protein Bites combine sweet mango, creamy Greek yogurt and vanilla protein powder into a refreshing no-bake frozen snack. Ingredients

  • 2 cups thick Greek yogurt (or dairy-free Greek-style yogurt)
  • 1 1/2 cups ripe mango chunks (fresh or frozen, thawed)
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons honey or maple syrup (optional, depending on the sweetness of the mango)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice (optional, for extra brightness)

Chocolate Drizzle

  • 3/4 cup dark chocolate chips
  • 1 teaspoon coconut oil

Optional Toppings

  • Toasted shredded coconut
  • Chopped pistachios
  • Freeze-dried mango pieces
  • Hemp hearts (seeds)
  • Lime zest
  • Cacao nibs

Instructions

  • Add the yogurt, mango, protein powder, vanilla extract, honey (if using), and lime juice to a blender or food processor.
    Blend until completely smooth and creamy.
    Spoon the mixture into 12-14 (more or less) silicone mini muffin moulds, ice cube trays or onto a baking paper-lined tray in small mounds.
    Freeze for 3–4 hours, or until completely firm.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the frozen bites from the moulds and drizzle generously with the melted chocolate.
    Immediately sprinkle with your chosen toppings before the chocolate hardens.
    Return to the freezer for 10 minutes to allow the chocolate to set.
    Store the frozen bites in an airtight container in the freezer for up to 2 months. Let them sit at room temperature for 2–3 minutes before eating for the creamiest texture.
