Ingredients

  • 2 cups pineapple chunks, frozen
  • 1 cup full-fat coconut milk (or light coconut milk for a lighter version)
  • 1/2 cup Greek yogurt (or coconut yogurt for dairy-free)
  • 1 scoop vanilla protein powder
  • 1 tablespoon desiccated coconut
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice (optional, for extra freshness)
  • 1-2 teaspoons honey or maple syrup (optional)
  • A handful of ice cubes, if needed for a thicker smoothie

Optional Add-Ins

  • 1/2 frozen banana

Instructions

    If you prefer a thicker smoothie, blend in a few ice cubes or extra frozen pineapple.
    Pour into chilled glasses.
    Garnish with toasted coconut flakes, fresh pineapple wedges or a sprinkle of shredded coconut if desired.

    This smoothie is best enjoyed fresh, but leftovers can be stored in an airtight jar in the refrigerator for up to 24 hours. Shake or stir well before drinking.
