Ingredients

  • 1 cup mixed nuts, roughly chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons hemp seeds (optional)
  • 1 cup dark chocolate chips
  • 2 tablespoons coconut oil
  • 1/3 cup chocolate or vanilla protein powder
  • Pinch sea salt

Instructions

  • Line a 12-cavity muffin pan with paper liners or use silicone molds. Or if smaller portions are required use a mini muffin pan.
    Divide the chopped nuts and seeds evenly among the muffin cups.
    Add the chocolate chips and coconut oil to a heatproof bowl.
    Melt gently over a saucepan of simmering water or in short bursts in the microwave, stirring until smooth.
    Remove from heat and whisk in the protein powder until fully incorporated. The mixture should be smooth and glossy.
    If it becomes too thick, add an extra teaspoon of coconut oil.
    Spoon the chocolate mixture evenly over the nuts and seeds, ensuring everything is coated.
    Tap the pan gently on the bench to help the chocolate settle around the nuts.
    Place the tray in the refrigerator for 1–2 hours or until completely firm.
    Remove from the molds and enjoy.
    Store in an airtight container in the fridge for up to one week or freeze for up to 2 months.
