Double Chocolate Frozen Yogurt Protein Bars
Ingredients
- 2 cups thick Greek-style yogurt (or dairy-free yogurt)
- 1 scoop chocolate protein powder
- 2 tablespoons cocoa or cacao powder
- 2-3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
Chocolate Swirl
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Optional Toppings
- Mini chocolate chips
- Cacao nibs
- Flaky sea salt
- Dark chocolate shavings
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, whisk together yogurt, protein powder, cocoa powder, maple syrup and vanilla until smooth.Pour the mixture into the prepared pan and smooth the top.
Chocolate Swirl
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the melted chocolate over the yogurt mixture.Use a knife or skewer to gently swirl the chocolate throughout.Sprinkle with any optional toppings.Freeze for 3–4 hours, or until firm.Remove from the pan and slice into 8-10 bars.Store in an airtight container in the freezer for up to 2 weeks. Allow bars to sit at room temperature for 2–3 minutes before serving for the best creamy texture.
