Double Chocolate Frozen Yogurt Protein Bars

Ingredients

  • 2 cups thick Greek-style yogurt (or dairy-free yogurt)
  • 1 scoop chocolate protein powder
  • 2 tablespoons cocoa or cacao powder
  • 2-3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

Chocolate Swirl

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Optional Toppings

  • Mini chocolate chips
  • Cacao nibs
  • Flaky sea salt
  • Dark chocolate shavings

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, whisk together yogurt, protein powder, cocoa powder, maple syrup and vanilla until smooth.
    Pour the mixture into the prepared pan and smooth the top.

Chocolate Swirl

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle the melted chocolate over the yogurt mixture.
    Use a knife or skewer to gently swirl the chocolate throughout.
    Sprinkle with any optional toppings.
    Freeze for 3–4 hours, or until firm.
    Remove from the pan and slice into 8-10 bars.
    Store in an airtight container in the freezer for up to 2 weeks. Allow bars to sit at room temperature for 2–3 minutes before serving for the best creamy texture.
