Funfetti Almond Protein Bars
Ingredients
- 1 cup almond flour
- 3/4 cup oat flour (oats blended to a flour)
- 1 scoop vanilla protein powder
- 1/4 cup almond butter (or cashew butter)
- 1/4 cup maple syrup or honey
- 2-3 tablespoons milk of choice
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional, for cake batter flavour)
- 3 tablespoons rainbow sprinkles
Optional Toppings
- Melted white chocolate
- Extra sprinkles
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a bowl, mix almond flour, oat flour, and protein powder.Add nut butter, maple syrup, vanilla extract, almond extract and milk. Stir until a soft dough forms. Fold through sprinkles gently.Press the mixture into the prepared pan.Add melted white chocolate and extra sprinkles if desired.Refrigerate for at least 1 hour to firm up.Slice into 8-10 bars and enjoy.Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
