Apple Protein Nice Cream
Ingredients
- 3 medium apples, peeled, cored and chopped
- 1/2 cup full-fat coconut milk or cream
- 4-6 soft dates, (if hard, soak 10 minutes and drain)
- 1/2 cup vanilla or unflavoured protein powder
- 1/2 cup walnuts or pecans, chopped
- 1 teaspoon vanilla extract
- 1/2-1 teaspoon ground cinnamon
- Pinch of sea salt
Optional Add Ins
- Nutmeg or mixed spice
- Raisins or sultanas
- Shredded coconut
Instructions
- Add chopped apples to a saucepan with a splash of water. Cook over medium heat until tender (about 6–8 minutes). Allow to cool completely.Add cooked apples, coconut milk, dates, protein powder, vanilla, cinnamon, and salt to a blender. Pulse a few times to keep some chunks for texture and pops of flavour.
