Ingredients
Base Crust

- 1/2 cup desiccated coconut
- 2 tablespoons maple syrup or honey
- 2 tablespoons coconut oil, melted
- Pinch of sea salt
Cheesecake Filling
- 1 cup light cream cheese, softened
- 1 cup thick Greek-style yogurt or blended cottage cheese
- 1-2 scoops vanilla protein powder
- 2-3 tablespoons maple syrup or honey (to taste)
- 1 teaspoon vanilla extract
- Juice of ½ lemon
Strawberry Layer
- 1 cup fresh or frozen strawberries (thawed if frozen)
- 1-2 teaspoons maple syrup or honey (optional)
Optional Toppings
- Fresh strawberry slices
- Chopped nuts
- Coconut flakes

Instructions
