Ingredients

Base Crust

  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons coconut oil, melted
  • Pinch of sea salt

Cheesecake Filling

  • 1 cup light cream cheese, softened
  • 1 cup thick Greek-style yogurt or blended cottage cheese
  • 1-2 scoops vanilla protein powder
  • 2-3 tablespoons maple syrup or honey (to taste)
  • 1 teaspoon vanilla extract
  • Juice of ½ lemon

Strawberry Layer

  • 1 cup fresh or frozen strawberries (thawed if frozen)
  • 1-2 teaspoons maple syrup or honey (optional)

Optional Toppings

  • Fresh strawberry slices
  • Chopped nuts
  • Coconut flakes
  • White chocolate drizzle

Instructions

Base Crust

  • In a bowl, mix oats, coconut, maple syrup, coconut oil, and salt until combined.
    Divide the mixture between 2-4 jars (depending on size) and press down firmly to form the base layer.
    Prepare the strawberry layer: Mash the strawberries with a fork or blend lightly for a smoother texture. Add sweetener if needed.

Cheesecake Layer

  • In a blender or bowl, combine cream cheese, yogurt (or cottage cheese), protein powder, maple syrup, vanilla, and lemon juice. Blend or whisk until smooth and creamy.

Assembly

  • Spoon a layer of cheesecake filling over the crust, then add a layer of strawberries. Repeat if desired.
    Refrigerate for at least 2–3 hours to set.
    Serve chilled and enjoy.
    Store in the fridge for up to 4 days
    Not suitable for freezing (best enjoyed fresh).
