Zesty Lime Protein Fudge
Ingredients
- 1/2 cup coconut butter (or thick coconut cream, chilled) recipe link for homemade coconut butter below in notes
- 1/2 cup vanilla or unflavoured protein powder
- 1/4 cup almond butter or cashew butter
- 2-3 tablespoons maple syrup or honey (to taste)
- 2 tablespoons fresh lime juice
- Zest of 1 lime
- 1 teaspoon vanilla extract (optional)
- Pinch of sea salt
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Soften the coconut butter by placing the jar in a bowl of hot water or give it a burst in the microwave. You want it softened but not melted.In a mixing bowl, combine coconut butter and nut butter until smooth.Add protein powder, maple syrup, lime juice, lime zest, vanilla (if using), and salt.Mix until a thick,creamy mixture forms.If the mixture is too thick, add 1 teaspoon of lime juice or a splash of milk to loosen slightly.Press the mixture evenly into the prepared tin.Chill in the fridge for 2–3 hours or freeze for 45–60 minutes until firm.Slice into 16-20 small squares and store chilled.Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
