Ingredients

  • 1/2 cup coconut butter (or thick coconut cream, chilled) recipe link for homemade coconut butter below in notes
  • 1/2 cup vanilla or unflavoured protein powder
  • 1/4 cup almond butter or cashew butter
  • 2-3 tablespoons maple syrup or honey (to taste)
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt 

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Soften the coconut butter by placing the jar in a bowl of hot water or give it a burst in the microwave. You want it softened but not melted.
    In a mixing bowl, combine coconut butter and nut butter until smooth.
    Add protein powder, maple syrup, lime juice, lime zest, vanilla (if using), and salt.
    Mix until a thick,creamy mixture forms.
    If the mixture is too thick, add 1 teaspoon of lime juice or a splash of milk to loosen slightly.
    Press the mixture evenly into the prepared tin.
    Chill in the fridge for 2–3 hours or freeze for 45–60 minutes until firm.
    Slice into 16-20 small squares and store chilled.
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
