Ingredients
Oat Base
- 1 cup rolled oats
- 1/2 cup desiccated coconut
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Strawberry Yogurt Layer
- 1 1/2 cups thick Greek-style yogurt (or dairy-free yogurt)
- 3/4 cups strawberries (fresh or frozen), diced plus extra sliced for topping
- 1 scoop vanilla protein powder
- 1-2 tablespoons honey or maple syrup (to taste)
- 1 teaspoons vanilla extract
Instructions
- Line a 12-cup muffin pan with muffin liners.In a small bowl, mix all oat base ingredients together.Divide the mixture up into the base of each muffin cavity. Place in the fridge or freezer to set.
Strawberry Yogurt Layer
- In another bowl, mix yogurt, diced strawberries, protein powder, sweetener, and vanilla until smooth.Spread the strawberry yogurt mixture evenly over the base of each muffin cup.Top up with sliced strawberries.Put into a freezer for 2-4 hours. Pop out each bite with a spoon and enjoy slightly defrosted 2-4 minutes later.Store in an airtight container in the fridge for up to 4 days or in the freezer for up to 2 weeks.
