Strawberry Yogurt Protein Bites

Ingredients

Oat Base

  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Strawberry Yogurt Layer

  • 1 1/2 cups thick Greek-style yogurt (or dairy-free yogurt)
  • 3/4 cups strawberries (fresh or frozen), diced plus extra sliced for topping
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoons vanilla extract

Instructions

  • Line a 12-cup muffin pan with muffin liners.
    In a small bowl, mix all oat base ingredients together.
    Divide the mixture up into the base of each muffin cavity. Place in the fridge or freezer to set.

Strawberry Yogurt Layer

  • In another bowl, mix yogurt, diced strawberries, protein powder, sweetener, and vanilla until smooth.
    Spread the strawberry yogurt mixture evenly over the base of each muffin cup.
    Top up with sliced strawberries.
    Put into a freezer for 2-4 hours. Pop out each bite with a spoon and enjoy slightly defrosted 2-4 minutes later.
    Store in an airtight container in the fridge for up to 4 days or in the freezer for up to 2 weeks.
