Choc-Berry Protein Fudge
Ingredients
Chocolate Fudge Base
- 1 cup cashew butter
- 1/2 cup chocolate or vanilla protein powder
- 2 tablespoons cocoa or cacao powder
- 2-3 tablespoons maple syrup or honey
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of sea salt
Berry Topping
- 1/2 cup fresh strawberries, chopped
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a bowl, mix cashew butter, protein powder, cocoa powder, maple syrup, melted coconut oil, vanilla, and salt until smooth and thick.Press the mixture evenly into the lined pan. Place the diced strawberries on top, pressing them down into the fudge a little as you do so.Place in the fridge for 1–2 hours or freezer for 30–45 minutes until firm.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle over the fudge and return to the fridge for 10–15 minutes to set.Cut into 8-10 bars or more smaller squares,Store in the fridge for up to 5 daysKeep in an airtight containerBest enjoyed chilled due to the fresh fruitEasy VariationsRaspberry Chocolate: Swap strawberries for raspberriesExtra Chocolate: Add chocolate chips to the baseBerry Swirl: Blend strawberries into a puree and swirl through.
